Satay Chicken Skewers

Super easy and super delicious, perfect for those easy mid-week healthy dinners. 

INGREDIENTS

PEANUT DIPPING SAUCE

1 tbsp of organic tamari sauce

1 tbsp of honey

1 tbsp of rice vinegar

juice of 1/2 lime

1 garlic glove minced

1 small knob of ginger (grated)

Add 1-2 tbsp of water to create a smooth consistency

CHICKEN MARINADE

2 chicken breasts diced into larger pieces

2 tbsp organic tamari sauce

1 tbsp of peanut butter

1/2 tbsp of rice vinegar

juice of 1/2 line

1 tsp of sesame oil

1 minced garlic clove 

Pinch of black pepper

Mix well and marinate chicken for 1 hour.

Make sure to soak the skewers for at least 20 mins prior.

 

INSTRUCTIONS 

  1.  Skewer chicken onto skewer sticks.
  2.  Grill on a medium heat grill for 7-8 minutes.
  3.  Remove and baste with any remaining marinade
  4.  Place back on grill and repeat cooking
  5.  Once nicely charred remove and serve with dipping sauce.
