JC’s Apple Crumble

One of my favourite family indulgences which lifts the soul and warms the heart! My children absolutely love this dessert and is my own personal recipe!

 

INGREDIENTS

  • 5 large apples of your choice, my preference Pink lady, peeled and chopped into small pieces
  • 3 tbsp of orange juice
  • 1 tsp of vanilla bean paste
  • 2 tsp ground cinnamon
  • Pinch of sea salt or celtic salt

CRUMBLE

  • 2 cups of organic rolled oats
  • ½ cup of coconut flakes
  • 50g organic coconut oil
  • ¼ cup of rice malt syrup
  • Pinch of sea salt
  • 1 tsp of cinnamon

INSTRUCTIONS

  1. Preheat the oven to 180C or 160C fan
  2. Place the apples in a saucepan and add orange juice, vanilla bean paste, 2 tsp cinnamon and sea salt. Slowly cook on a medium heat until apples are just soft. Then place into a baking dish or pie dish.
  3. To make the crumple, combine the crumble ingredients in a bowl and mix well until it reaches a sandy moist texture.
  4. Spread the crumble over the apples and place in the oven.
  5. Bake for 30-40 minutes or until golden brown.
  6. Serve with a dollop of fresh cream, coconut yoghurt or Greek Yoghurt.
