JC’S Five Minute Banana Pancakes

These are my go to healthy mid-week breakie, which literally takes five minutes to whip up. And trust me they will be a favourite amongst the whole family.

 

INGREDIENTS

1 mashed banana

2 eggs organic beaten

Pinch of cinnamon

1 tbsp of coconut oil or butter for melting in the pan

 

INSTRUCTIONS

  1. Mash banana in a mixing bowl
  2. Add two eggs to the banana and whisk mixture well till smooth
  3. Melt butter or coconut oil in a medium heat frying pan, add pancake mixture
  4. Cook one side for approx. 2-3 minutes or until set, then turn pancake over and cook another 1-2 minutes.

Serve pancake with mixed berries and a dollop of fresh cream
